Tortilla Española

Easy Spanish Omlette – Serve with fresh bread.

Ingredients

3 or 4 large potatoes (about 2 LBS)

1 large Spanish onion

4 TBS olive oil

6 eggs

salt & pepper to taste

Directions

Peel and cut the potatoes into thin slices.

Peel and chop the onion.

Heat the olive oil in a frying pan – add the potatoes and onion -cooking slowly until they are soft.

Remove from pan and transfer to a bowl.

Discard most of the oil from the frying pan.

In another bowl beat the eggs and add them to the potato/onion mixture – then salt and pepper to taste.

Fry the mixture gently until the eggs look set – then slide out onto a plate.

Put the mixture back in the frying pan to cook the other side – then drain.

Serve Warm with bread.
