Papas Arrugadas - Canarian Potatoes

Wrinkled salted potatoes - canarian style.
Ingredients
2Kg (5lbs) small to medium potatoes unpeeled.
200 gram (7 1/4 oz.) Sea salt.
Directions
Wash the potatoes thoroughly.
Put salt in a large saucepan
Add water to a depth of about 3.5 cm (1 1/2") and add potatoes.
Cover the potatoes - not the pan with cabbage leaves.
Boil slowly for about 20 minutes.
Drain and steam dry over low heat - a white salt layer should form on the potatoes and they should be slightly wrinkled.
When finished, coat potatoes with a layer of mojo sauce and you have Canarian Papas con Mojo

when i went to gran canaria with my friends last year, i discovered papas arrugadas, i thought they were amazing, im so glad i found the recipe and mojo sauce, i will be making them all the time now!!! Aww no say ma kids ;-)
